Barbaran’s Merlot DOC Venezia, a 100% exclusive varietal, originates at the renowned Podere dei Campi in Zenson di Piave, Treviso. The medium clay soil, characteristic of this area, gives Barbaran’s Merlot a distinctive profile. Breeding, following the Sylvoz method with a planting density of 2400 vines per hectare, ensures quality production. The harvest, carried out with precision, takes place from late September to early October.Winemaking process in the Winery
Winemaking of Barbaran’s Merlot DOC Venezia follows artisanal harvesting, with special attention to crushing and destemming. Fermentation takes place in temperature-controlled steel vessels, in the presence of the skins, (22/24°C) for 5-6 days, using selected yeasts. Maturation on yeasts for about 3 months and aging in barrels give the wine a unique complexity. After clarification, the wine rests in the bottle for 4 to 6 weeks before being introduced to the market.Sensory characteristics
Barbaran’s Merlot DOC Venezia, placed with prestige in the winemaking history of the Veneto plain, is synonymous with full structure, robustness and rich color. Its low fixed acidity promotes refined aging. In the goblet, it reveals an intense ruby red color that evolves into garnet hues with time.

The crisp raspberry scent when young anticipates a full, robust and slightly herbaceous flavor. Perfect for any course, it marries red meats and light sauces beautifully. Its versatility also makes it ideal with medium-aged raw cheeses. The recommended serving temperature is 16-18°C.
