An Authentic Wine Experience from the Lands of Piave
Raboso del Piave DOC embodies the quintessential art of winemaking, expressing its unique characteristics through careful selection of details. This extraordinary wine is made from 100% of the native Raboso Piave grape variety, grown with passion on the renowned Podere San Giuseppe, located in Zenson di Piave, Treviso. The terroir, with its medium clay soil, gives Raboso del Piave an extraordinary depth and complexity. The careful cultivation process, with the Sylvoz training form and a planting density of 2400 vines per hectare, helps create an optimal environment for the grapes to develop fully. The harvest, carried out with precision and dedication, takes place in the magical period from mid-October to the end of the month, capturing the unique essence of the land and ensuring an unforgettable sensory experience in each bottle of Raboso del Piave DOC.Vinification and Aging Process:
Artisanal harvesting followed by painstaking crushing begins the process. Fermentation takes place in steel vessels in the presence of the skins at controlled temperature for about 8-10 days with selected yeasts, followed by aging in oak barrels for at least one year. After making the wine clear, we let it mature in the bottle for an additional two years, ensuring a product of extraordinary complexity and richness.Tasting of Raboso Piave:
Raboso Piave, present as early as the 17th century, is distinguished by its “rabid” character, combining acidity and tannins in an astringent way. A full-bodied wine, tart and tannic when young, developing a broad, full bouquet with notes of violets, morello cherry and wild blackberry as it ages. On the palate, it is dry, savory, tannic, fresh, austere and satisfying.Recommended pairings:
Reaching full maturity after at least two years, one of which is in barrel, Raboso Piave is the ideal companion for game, red meats, grilled meats and very aged cheeses. Its acidity cleanses the palate, making it perfect even for fatty dishes. At a serving temperature of 16-18°C, it becomes an excellent meditation wine, accompanying long winter evenings among friends.
